A delicious carrot cake loaf with a creamy cream cheese frosting.

Preheat oven to 350 F, and line a loaf pan with parchment paper. Set aside. In a small bowl, whisk together the flour, baking soda, baking powder, spices, and salt. Set aside. In a large bowl, beat the sugar, eggs, and oil till thick and foamy, 1-2 minutes. Add the sour cream and vanilla, and mix well. Add the dry ingredients and stir untill just combined. Fold in the carrots. Transfer batter to loaf pan. Bake for 45-60 minutes, or until an inserted toothpick comes out clean. Cool completely. For frosting, beat together cream cheese and butter untill smooth. Add vanilla, salt, and powdered sugar.
