In a medium bowl, whisk together the cake flour, all purpose flour, baking powder, baking soda, cocoa powder and salt. Set aside. In a large bowl, beat together the softened butter, granulated sugar and brown sugar until light and fluffy, about 3-5 minutes. Add your eggs, vanilla and food coloring, and beat lightly until the red is evenly distributed. Add in the dry mixture and mix with a spatula until halfway combined. Add in the chopped chocolate and mix until just combined. Chill dough for at least 1 hour. I like to pre-scoop the dough into balls before chilling so it’s easier! Preheat the oven to 350 F, and line a baking tray with parchment paper. Place 6-8 cookies on each tray, and bake for 10-12 minutes or until slightly undercooked in the center. They will continue to cook on the tray out of the oven so don’t worry! Let cookies completely cool
