Oreo Cupcakes

Delicious Oreo cupcakes topped with a creamy frosting, perfect for a sweet treat.

Preheat the oven to 400º F. Line a cupcake pan with cupcake liners. In a large bowl, beat the butter and sugar, until fluffy, approx. 1-2 minutes. Add in the egg whites, sour cream, milk, and vanilla extract, beating until combined. In another bowl, combine the flour, baking powder, and salt. Using a spatula, gradually add the flour mixture to the wet ingredients, about one third at a time. Fold in the crushed Oreos until just incorporated. Pour batter into each cupcake liner. Bake for 5 minutes at 400º F. Keeping the cupcakes in the oven, turn the heat down to 350ºF and bake for 8-9 minutes, or until a few moist crumbs remain on a toothpick when inserted into the center. Using a hand mixer, beat the cream cheese and vanilla together until smooth and fluffy. Slowly add in the sugar while continuing to mix the cream cheese mixture. On a low speed, add in the Cool Whip. You may need to allow the frosting to set up in the refrigerator while the cupcakes continue to cool. Make sure the cupcakes are all the way cool before adding frosting. Pipe the frosting onto the cupcakes and add some crushed Oreos if you desire!
