Derby pie barsš¤š Ingredients Shortbread Layer - 1 1/4 cups all-purpose flour - 1/3 cup brown sugar - 1/2 cup butter, melted - 1 tsp pure vanilla extract Filling - 4 eggs - 3/4 cup brown sugar - 3/4 cup corn syrup - 1/3 cup all purpose flour - 1 tsp vanilla - 1/2 cup butter, melted - 3 tbsp bourbon - 3/4 cup chocolate chips - 1 1/2 cups chopped pecans Directions - Preheat the oven to 350F. - Line a 9x9 pan with parchment paper. - In a large bowl, whisk together the flour and brown sugar. - Add the melted butter and vanilla extract and mix to combine. Mix just until a crumbly dough forms. - Press the mixture into the bottom of the prepared pan and bake for 10-15 minutes, or until the crust is golden brown. - Set aside to cool completely while you prepare the filling. - Turn oven down to 325ĀŗF. - In a large bowl, whisk the eggs then add the brown sugar, corn syrup, and flour until fully incorporated - Stir in the vanilla, butter, and bourbon then add in the chocolate chips and pecans. - Pour on top of the shortbread crust and bake for 60-70 minutes, or until itās fully set. - Remove from oven and let cool completely - #kentuckyderby #pecanpie #bakingfun
