With peach season among us, I had to do a cinnamon peach version of my classic fruit bars! Made using @risingstarbaking vanilla bean paste 💙you can grab your bottle of vanilla bean paste at @target !
Make the peach filling first by adding diced peaches, granulated sugar, brown sugar if using, lemon juice, cinnamon, and salt into a saucepan over medium heat. Cook for 5–7 minutes until the peaches soften and release juices. Mix cornstarch with water until smooth, then stir it into the peaches. Cook another 1–2 minutes until thickened and jammy. Remove from heat and stir in vanilla if using. Let cool completely before using. Preheat oven to 350°F and line an 8x8 pan with parchment paper. Whisk flour, baking powder, salt, and cinnamon together in a bowl and set aside. Cream butter and sugar together until light and fluffy, about 3–5 minutes. Mix in eggs and vanilla until fully combined. Add dry ingredients into wet and mix until just combined. Do not overmix. Reserve about 1/2 cup of dough. Press remaining dough evenly into the prepared pan. Spread the cooled peach filling over the base layer. Drop reserved dough over the top in small pieces so it partially covers the filling. Spread cinnamon butter evenly over the top. Bake for 45–50 minutes until the top is golden and the filling is bubbling. Cool completely before glazing so the bars set properly.
