Apple Blondies made with Avocado Oil Shortening

Instructions
Apple Filling: 1. Using a medium pot over low heat, cook the apple filling mixture (gala apple, 1 tbsp brown sugar, 0.5 tbsp avocado oil shortening, 0.25 tsp pure vanilla extract, 0.5 tsp ground cinnamon) for about 5-7 minutes or until apples have cooked. 2. Allow to cool completely. Blondies: 1. Preheat oven to 350 degrees F (175 C) and spray an 8x8 baking dish with baking spray. 2. Using a large bowl, cream the 1 cup avocado oil shortening, 1 cup brown sugar, and 0.25 cup granulated sugar until light and fluffy. 3. Beat in the 2 eggs, 1 at a time until combined. Add in the 0.5 tsp kosher salt and 1.5 tsp vanilla extract. 4. Using a medium bowl, whisk together the 2 cups all-purpose flour, 1 tsp baking powder, 2 tsps ground cinnamon, 0.25 tsp ginger, and 0.5 tsp allspice. Gradually mix in the dry ingredients into the wet until just combined. 5. Spread half of the batter into the prepared 8x8 baking pan. 6. Spread the cooled apple filling onto the top of the batter. 7. Spread remaining batter evenly over the apple filling. 8. Place into the oven and bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. 9. Let the blondies cool completely before drizzling icing. Icing: 1. For the icing, combine 1-2 tbsp milk and 0.5 cup powdered sugar until it reaches your desired consistency. 2.
