What you need

cup sugar
cup vegetable oil

tsp salt

tsp ground nutmeg

cup butter

cup powdered sugar

tsp vanilla extract

tsp baking powder

tsp baking soda

tsp ground ginger

oz cream cheese

cup all purpose flour
cup plain greek yogurt

tsp ground clove
egg

cup baby-cut carrots
Instructions
Preheat oven to 350 F, and line a loaf pan with parchment paper. Set aside. In a small bowl, whisk together the flour, baking soda, baking powder, spices, and salt. Set aside. In a large bowl, beat the sugar, eggs, and oil till thick and foamy, 1-2 minutes. Add the sour cream and vanilla, and mix well. Add the dry ingredients and stir untill just combined. Fold in the carrots. Transfer batter to loaf pan. Bake for 45-60 minutes, or until an inserted toothpick comes out clean. Cool completely. For frosting, beat together cream cheese and butter untill smooth. Add vanilla, salt, and powdered sugar.View original recipe
