Cozy Tomato Soup and Grilled Cheese

Lunch today was spectacular! Soup season is among us, so starting off with a classic tomato soup paired with grilled cheese is perfect for cozy comfort foods. Includes recipes for both homemade tomato soup and a simple grilled cheese sandwich.

What you need

tsp salt
bay leaf

tsp ground black pepper

fresh basil leaves

slice bread

clove garlic clove

can canned diced tomatoes

cup vegetable stock

tbsp butter

tsp red chili flakes

cup onion

Instructions
For Tomato Soup: Heat 2 tablespoons butter in a big pot and add the chopped onion, carrots, and garlic. Sauté on medium-high heat for about 4 to 5 minutes until the onions soften. Add the bay leaf, red chilli flakes, and mix. Now add the crushed tomatoes and the vegetable stock with chopped basil leaves. Add salt and pepper to taste and bring to a boil. When it boils, reduce the heat to low, cover with a lid, and let it simmer for 30 minutes. Transfer the contents to a food processor and pulse until pureed (take precaution that the contents will be hot; a hand blender works very well). Keep warm until you serve. Serve with grilled cheese. For Grilled Cheese: Spread butter on both pieces of bread. Then add your cheese of choice (Muenster and cheddar were used in the example) and close the sandwich.
