What you need
cup light-brown sugar

tbsp cinnamon
tbsp minute tapioca
cup granulated sugar

peach
tsp baking powder

salt
cup vegetable oil

cup all purpose flour
Instructions
- Preheat oven to 450 F. Grease a 9 inch pie dish. Set Aside. - In a bowl, whisk together the dry ingredients for the crust. - Add the cold water and vegetable oil. Mix until it forms a ball. Press it evenly into the pie dish, going up the sides as well. Set in fridge while you prepare the filling. - In a bowl, combine the peaches, granulated sugar, tapioca, cinnamon and lemon juice. Let it sit for 15 minutes. - In another bowl, combine the crumble topping ingredients with your hands until it’s crumbly. - Using a fork, poke holes on the bottom on the pie crust. Sprinkle a thin layer of the crumble on top of the crust then pour the peach filling. Top with the rest of the crumble. - Bake at 450 F for 10 minutes then lower the temperature to 350 F.
