What you need

sweet potato

cup baby spinach leaves

tbsp olive oil

cup smoked salmon

cup parsley

cup cheese

tsp pepper

Instructions
Preheat oven to 350°F. Heat 2 tablespoons of olive oil over medium-high heat in a 10” oven-proof skillet, such as cast iron. Add the cubed sweet potato and cook, stirring often, until tender and slightly crisp. Add the thinly sliced red bell pepper and cook until softened. Remove the skillet from heat and add the smoked salmon and baby spinach, arranging them evenly in the pan. If using, sprinkle with grated cheese. Add salt and pepper to the beaten eggs, and pour the egg mixture over the skillet ingredients. Bake in the center of the oven for 15-20 minutes or until the edges are pulling away from the pan and the middle is set. Scatter with chopped parsley or dill.
