Healthier chocolate chip pumpkin oatmeal bars!! If you remember my OG posts, you know I loved making healthier desserts so might bring that back🫣 let me know if you want a series where I make healthier versions of your favorite desserts!

What you need

cup creamy peanut butter

cup rolled oats

cup pumpkin puree
cup liquid honey

tsp vanilla extract

cup chocolate chunks

tsp pumpkin pie spice

tsp baking powder

cup all purpose flour

pinch salt
egg

cup light-brown sugar
Instructions
Preheat oven to 350ºF and spray an 8x8 baking dish (with nonstick cooking spray or parchment paper). In a small bowl, combine the flour, baking powder, baking soda, pumpkin pie spice, salt and oats. Set aside. In a medium bowl, combine the brown sugar, honey, vanilla, egg, peanut butter and pumpkin puree. Whisk well until combined. Slowly add dry ingredients to wet and mix until almost combined. Fold in the chocolate chips until just combined. Transfer batter into baking dish and use a spatula to spread it out. Bake at 350ºF for 18-22 minutes, or until an inserted toothpick comes out clean. Let cool for 10 minutes. Slice and serve!View original recipe
