ripe banana

tsp vanilla extract

tsp salt

cup all purpose flour

cup brown sugar

Instructions
Preheat the oven to 350 F. Grease a 8.5-by-4.5-inch loaf pan with cooking spray, or line with parchment paper. In a sauce pan, brown the butter over medium to low heat and set aside. Let it cool slightly. In a medium bowl, whisk together the flour, brown sugar, baking powder, cinnamon, salt, and nutmeg, breaking any large clumps of brown sugar with your hands. In a separate medium bowl, mix the mashed bananas with the eggs and vanilla until fully incorporated. Add the dry ingredients to the banana mixture, and mix together until just combined. Pour in the melted brown butter and stir until fully incorporated. Transfer the batter to the prepared loaf pan. Bake for about 60-70 minutes, or until a toothpick inserted into the middle of the loaf comes out clean. Leave the loaf in the pan for at least 15 minutes before transferring to a wire rack.
