Cranberry Orange Cake

What you need

tbsp orange juice

cup granulated sugar

cup all purpose flour

cup fresh cranberries

cup brown sugar

tsp cinnamon powder

tbsp unsalted butter

tsp baking powder

dash ground nutmeg

tsp table salt

cup milk
orange zest
egg
Instructions
Preheat your oven to 350°F and line a 9x13 inch pan with parchment paper. In a medium bowl, sift together the flour, spices, baking powder, and salt. Set aside. In a small bowl, mix the cranberries with 1 tbsp from the flour mixture until the cranberries are coated. Set aside. In a large bowl, add the granulated sugar and orange zest. Use your fingers rub the zest into the sugar. Do this for around two minutes. Add the butter then cream together until light and fluffy, about 3 to 5 minutes. Beat in the eggs, orange juice and vanilla. Add the dry mixture in. Slowly add in the milk and once the batter comes together, scrape the sides of the bowl. Fold in the cranberries. Pour the batter into the prepared pan and bake for 45-60 minutes, or until a toothpick inserted into the center of the cake comes out clean once ready.
