Cinnamon Apple Oatmeal Cookies

Bringing back my fall cookie series from last year and starting off with one of my favorites: cinnamon apple oatmeal cookies!🍏🍂🍪

What you need

cup rolled oats
egg

cup powdered sugar

cup all purpose flour

tbsp unsalted butter

tbsp granulated sugar

tsp baking soda

tsp vanilla extract

apple

tbsp milk

tbsp bourbon

pinch ground nutmeg

tsp salt

tbsp light-brown sugar

tsp cinnamon
Instructions
To make the apples: In a saucepan, cook the butter, sugar, spices, bourbon and diced apples over medium to high heat, stirring occasionally, until tender and golden. Strain the syrup from the apples, and let the apples cool. In a medium bowl, whisk the flour, cinnamon, baking soda, and salt. Set aside. In another bowl, beat the butter and sugars until light and fluffy, about 3-5 minutes. Add the egg and vanilla, and beat until combined. Add in the flour mixture and mix until combined. Fold in the oats. Fold in caramelized apples and mix until just combined. Chill dough in the fridge for at least an hour. Preheat oven to 350F and line a baking sheet with parchment paper. Using a medium cookie scoop, place cookies on baking sheet 2” apart. I did 6 cookies per sheet. Bake for 16-20 mins or until edges are browned but center is still soft and unset. Cool for 5 minutes on baking sheet, then transfer to cooling rack to cool completely. Combine sugar and milk in a bowl. Add in 1/2 tbsp at a time until it’s your desired consistency.
