What you need

Instructions
Preheat the oven to 350 F. Line a 9-inch baking pan with parchment paper. In a heatproof bowl set over a pot of simmering water, melt the butter and 1 1/4 cups dark chocolate together, stirring until smooth. Remove from heat and let cool slightly. In a separate large bowl, beat the eggs, vanilla, brown sugar, and granulated sugar until pale, thick, and doubled in volume, whisking until no granulated bits of sugar are felt. Slowly whisk the cooled chocolate mixture into the egg mixture until fully incorporated. Sift in the flour and cocoa powder and gently fold until just combined. Gently fold in the chopped chocolate and chocolate chips. Pour the batter into the prepared pan and smooth the top. Bake for 28–32 minutes, or until the edges are set and the center has a slight wobble. Let the brownie cool completely in the pan. Then cut out the inside of the brownie to make a ‘well,’ leaving a crust on the outer edge. For the filling: Whip heavy cream until stiff peaks (ideally with a cold whisk and in a cold bowl). In a separate bowl, beat cream cheese and sugar until smooth. Add Oreo cookie crumbs and beat until incorporated. Add whipped cream into cream cheese mixture and beat until combined. Fill the brownie with the filling and refrigerate until set (approximately 1-2 hours). Sprinkle with additional Oreo cookie crumbs if desired.View original recipe
